Constantinople stands apart through its deep cultural narrative and commitment to genuine authenticity expressed by every member of its staff. Every detail — from the architecture and décor to the menu and service — reflects centuries of shared influence through traditions which has been carefully curated by Nedim Korkmaz, Ridvan Kan and Chief Berkan Sakaci.

The restaurant emphasizes storytelling through food serving Turkish staples like balloon bread with an herbed butter light and serving slow-cooked rich stews in sealed clay pots, that are broken open over a flaming fire. 

It is more than a restaurant; it is an immersive cultural experience.

ORIGINS

The founders of Constantinople trace their roots to Anatolia and Mesopotamia, regions historically known for their hospitality, craftsmanship, and rich culinary diversity. Their mission is to share these traditions with Portland, introducing a cuisine shaped by migration, trade, and centuries of cultural exchange.

nedim korkmaz

Nedim has made Portland his home for over 15 years and is well known for his warmth and attentiveness. He has a decade of experience in food service hospitality at high-end dining and has curated hundreds of community cultural events where he creates a welcoming atmosphere that reflects the generosity and spirit of Turkish hospitality.

RIDVAN kan

Ridvan brings over 20 years of experience managing multiple successful restaurants throughout the City of Diyarbakir in Anatolia. Beginning his career as a teenager, he grew up in the restaurant world and developed a deep love for hospitality—creating welcoming spaces and sharing food that brings the community together.

BERKAN sakaci

Chef Berkan’s love of food began at a young age, inspired by his grandfather, who taught him to cook and showed him how every dish could tell a story. His passion for cooking and sharing meals with his family eventually led him to pursue formal training at Nevşehir Hacı Bektaş Veli University, where he specialized in Gastronomy and Culinary Arts.
